Here’s a recipe for you to try:
1 lb. jumbo lump crabmeat
2 c. chopped honeydew melon or pears
½ c. Progresso plain or Italian breadcrumbs
1 c. mayonnaise (preferably Hellman’s)
2 T. curry powder
2 t. paprika
1. Preheat oven to 375 degrees.
2. Combine all ingredients except paprika and spoon into 4 scallop serving shells or shallow ramekins. Sprinkle top of each shell with paprika.
3. Bake for 20-22 minutes. Serve immediately.
I like to serve this with basmati rice and sauteed spinach.
